How to make Homemade Drumstick Ice Cream

So the base for this is my two ingredientice cream. What you need for this is heavy whipping cream,something that has around 38% fat content or even higher. You wanna make sure that your cream whipsup really thick. So whip this cream until soft peaks form.
I’m using an electric hand mixer for this,you can do it by hand but you’ll need a lot of elbow grease. So there you go, took around 2-3 minutes andthen you have billowy soft peaks.
So our next ingredient is condensed milk,I like to use a fat free condensed milk because I find that it’s a little bit less sweet. If you can’t find condensed milk I alsohave a recipe on my website it’s really easy to make. So throw your condensed milk right in thereand turn your machine on medium high speed and whip it up until stiff peaks form. So this doesn’t take long, what you wantto see is the cream holding its shape, forming a ribbon. That means stiff peaks.
Ok we’re gonna stop there, you don’t wantto over whip your cream or you can separate your ice cream, so we’re going to stop rightthere. Now here I have a bit of caramel sauce, ina classic drumstick ice cream there is caramel ice cream on the inside which is really delicious. So I have the caramel sauce here you can usestore bought or homemade, and I’m just gonna drizzle that into my ice cream base. So with a spatula just swirl in your caramelsauce. I don’t like to mix it too much becauseI like that ripple effect throughout my ice cream. Ok that’s it, our ice cream is ready. Now this can happily go into our fridge whilewe get our mold ready. While our ice cream is chilling,
lets makeour chocolate shell for our cones. This is very basic, here I have some chocolatechips I’m gonna add those into our bowl. I like to use bittersweet but you can useany type of chocolate you like.
Next we’re gonna add some coconut oil, whatthis does is make the chocolate easier to work with to swirl around our mold. Lovely now we’re gonna pop this in the microwavefor roughly around a minute or so. Checking every so often just until it’smelted. So when your chocolate comes out of the microwavejust give it a little swirl to make sure the chocolate and coconut oil has combined. So check this guy out, here I have a minifrozen treats pops mold. This is sweet creations by good cook, thislittle guy has a cone built in and it also has a silicone top. So we’re gonna be able to make our own homemadecones. Now I’m gonna make ice cream today but you can use this for popsicles, frozen yogurt, sorbet whatever you like it’s really versatile. So remove your cone and take your little siliconetop. What I’m gonna do it put a tablespoon ortwo of our melted chocolate, and then in your mold just swirl it all around making sureyou cover the mold. And just bring it all the way to the top aswell. You’re just creating that nice shell forour drumstick. Feel free to add a little more chocolate if you need to. And just do the rest, it helps here if yourchocolate’s not too hot and it’s a little bit thicker, it coats it so much better. So I’m gonna pop this in the freezer now,just for two minutes so the shell can harden then we’ll add in our ice cream.
Ok assembly time, here the chocolate is frozenon the inside which means it won’t mix with our ice cream. And now what you want to do is with a spoon,fill up your molds to the top with your ice cream. So once they’re filled to the top give yourmold a little tap on the counter just to settle the ice cream and make sure there’s no airbubbles. Ok now all that’s left to do is just popin our little ice cream cones. Now you want to make sure that you stick themin there, into the ice cream so it’s easy to de-mold. Ok lovely these guys are ready for the freezer. I like to leave them in there overnight so they get really nice and firm and ready to eat the next day. So here I have some cones ready to go I frozethem in advance because I wanted them to be ready. So here’s what you do, very carefully peelback the cone, give it a little wiggle, go easy here because you don’t want to crackyour chocolate. Oh it’s coming out.
Look at that, how gorgeous is that? I think this might be the most adorable thingI’ve ever seen. So so cute, and it didn’t crack, I’m thrilled. Gorgeous, ok, one down. I’m really thrilled with this they lookamazing. So, a classic drumstick has peanuts on theoutside, here I have some of the chocolate shell we made earlier. I’m gonna pour it over all of my cones andas I do i’m gonna sprinkle on some chopped toasted peanuts. And that’s gonna stick to the fresh chocolate. Oh my god these are fantastic. So once these are done you can pop them inyour freezer for up to four weeks or you can eat them straight away.
